Dandelions are one of the most recognizable—and most overlooked—plants growing in our yards.


Most people try to get rid of them.


But every part of this plant can be used.


And once you start using them… you’ll never look at your yard the same way again.

🌼 What is Dandelion?

Dandelions are easy to identify with:

  • Bright yellow flowers

  • Jagged leaves

  • Deep taproots

They grow abundantly across Central Illinois and are one of the most accessible wild plants for beginners.


🌿 Why Use Dandelion?

Traditionally, dandelions have been used for:

  • Supporting digestion

  • Liver support

  • Natural detox support

  • Nutrient-rich greens

They’re packed with vitamins and minerals and have been used in both food and herbal practices for generations


Recipes: Syrup | Salad | Tea

🍯 Dandelion Syrup (“Dandelion

Honey”)

This is one of the most popular and family-friendly ways to use dandelions.


🛒 Ingredients

  • 2 cups dandelion petals (yellow parts only)

  • 2 cups water

  • 2 cups sugar

  • 1–2 tbsp lemon juice


🥣 Instructions

  1. Remove green parts from flowers (they add bitterness)

  2. Pour hot water over petals

  3. Let steep 12–24 hours

  4. Strain liquid

  5. Add sugar and lemon juice

  6. Simmer until it thickens into syrup


💡 How to Use

  • Pancakes

  • Biscuits

  • Tea

  • Lemonade

🥗 Dandelion Fresh Salad

Dandelion greens are more bitter—but that’s part of what makes them beneficial.


🛒 Ingredients

  • 1–2 cups dandelion leaves (young leaves preferred)

  • Mixed greens (optional)

  • Cherry tomatoes

  • Cucumbers

  • Shredded carrots

Dressing:

  • Olive oil

  • Apple cider vinegar

  • Honey

  • Salt + pepper


🥣 Instructions

  1. Soak leaves in cold salt water for 10 minutes (reduces bitterness)

  2. Rinse and drain

  3. Toss with vegetables

  4. Add dressing and serve


💡 Why It Works

  • Bitterness supports digestion

  • Pairs well with sweet dressing

  • Great introduction to wild greens


Dandelion greens are commonly used raw in salads or lightly cooked like other wild greens

🍵 Dandelion Tea (Simple &

Nourishing)

A simple, everyday way to use both leaves and roots.


🛒 Ingredients

  • Fresh or dried dandelion leaves or roots

  • Hot water


☕ Instructions

  1. Add dandelion to a cup or jar

  2. Pour hot water over

  3. Let steep 10–15 minutes

  4. Strain and enjoy


💡 Optional Add-Ins

  • Honey

  • Lemon

  • Mint

⚠️ Before You Harvest

  • Be 100% sure of identification

  • Avoid sprayed areas and roadsides

  • Use young leaves for best flavor
